Mine would be a full bedroom set. King size sleigh bed, bureau for her and me, shorter vanity/dressing table for her w/mirror and blanket chest at the end of the bed. It would all be made out of walnut.

Due to our proxy I can't get to it right now, BUT...
I want to build a full dining room set, featuring Mexican Rustic and Amish themes, including an enlarged version of the Ponderosa Pine rustic buffet and hutch that www.directfrommexico.com sells. For a table I want to build something along the lines of an Amish Harvest Table. I have yet to figure out the chairs...
The not dream, but current reality project is full refacing, and new drawers for my kitchen and bathrooms using the MLCS Mitered door frame set. I LOVE the profile I got from them, just need the raised bit and lots of oak... The material which is sitting and aging in my shop right now is white oak, and will be finished in Minwax Golden Pecan stain applied in 3 wipe on, soak, wipe off and dry coats to get the color I want, followed up by a couple of coats of Minwax satin poly, hand sanded with 400 grit between coats for a smooth finish. The hardware is Amerock brushed nickel exposed joint hinges that hide the mount behind. The knobs / drawer pulls are the brushed nickel finish twisted birdcage looking things... Granite counters are being added to the kitchen, along with upgraded faucet in brushed nickel, and an under rim mount brushed finish stainless steel double tub sink. A brushed stainless Steel backsplash is going in place, The fridge and freezer are very recent, the stove and microwave need to be updated. Unfortunately I have electric only...
Another current project, that is in the planning stage is a nursery. (I was just two days ago pointed to the plans / kit from Rockler for the convertible crib plan that I can mod to my own thing). This will be made with highly figured Pecan that was sourced from an orchard owned by a friend's family years ago, and has been sitting in a barn aging. It would seem the guy that milled the stuff forgot about it and passed on. I am buying the stuff at a bargain price. This set will be finished with the same finish steps as the cabinets. I fully expect this to be darker and with more character. The nursery set will include a 6 drawer lateral dresser, convertible crib, and toy box.Please like and subscribe to my YouTube channel. I would love to be asked to buiild new furniture for the Oval Office in the White House in Washington D.C. by whomever the First Lady is and sanctioned by Congress.
When done.. move on to the "Vatican" in Rome which is somewhat "stuffy" IMO but... they send a truck to pick it up as I don't care for morning commute anymore. Then I'll catch the Biltmore House (which I love along with the grounds) as soon as I'm finished with those two jobs.
Time allowing.. I would also love the re-paint the ceiling of the Sistine Chapel which took Michael-angelo 3 years to paint. I could knock that "puppy out in about 3 hours with a roller.
I know... go back to my shop and "shut up".. OK.. you convinced me! I'll do just that...

Degree of difficulty is a rather subjective judgment. Stock work/ carving takes a different skill set than flat work. Making the stock is only part of the battle IMHO. Fitting and finsihing can be more fussy. IMHO unlike flat work one really needs to be able to visualize what the finished project will look like. Inletting that is not visable but needed for mechanical clearance is just one of the items to consider depending on action type. I've made one shotgun butt stock and checkered a few other stocks. I'll stick with checkering, which is tedious enough all by itself.I would like to make a gun stock someday...
I think that would be much harder than other furniture projects.
When it comes to carving is that something that you work up to or is it considered a starters project? I guess my first one would mimic an existing stock just for practice and work up to fancy walnut and better detail..???
No idea.

Above pic is a stock for a Ruger No.1 rifle.

A new kitchen. Probably a new house to go with it, but I will assume that comes with the new shop.
Other than that, I have no real dream project. I just dream that I have the skills to do projects
