If a garage is attached to a home most codes require to layers of 5/8" type x sheetrock as a one hour burn time protection. It can be applied as one layer on each wall of the attching wall or most hang it on the garage side. Keep in mind it must be sealed off though the roof systen too to meet firecode.
My shop is detached and I am in the process of insulation with vapor barrior.1/2" rock fire taped and then a layer of type x 5/8 over it. that will be fire taped too. It will absorb a lot of sound and retain the needed heat in the winter.
If it is impossible just give me a couple more days.

You didn't mention the ceiling - you might already have one, but when I did mine I used foil face foam board over the insulation. It was really easy for me to do by myself with a deadman support. I had planned to foil tape all the joints but haven't done so yet and the place is actually useable in the winter now. Oh yea, I used 7/16 OSB over the insulation. I like your idea of an insulated curtain over the doors.
