The larger panels in a lot of antique furniture were made with tongue and groove joints. Joints needed the extra support to aid the glues in holding. If the glues available then were as good as what we know have, this probably wouldn't be the case.
Same goes for finishes. Painted furniture used lead based paint because that was what was made. Even in restoring an antique crib, for example, you wouldn't want the original type paint.
