I hope you're still around!
My neighbor has almost the same situation as you did, but with brick instead of stone.
She asked me to consider building a mantle and surround, and my initial sketches are similar to what you have made. I even plan to use poplar.
Can you elaborate on making the mantle? Particularly the edge treatment...I assume you used or made a molding, or built up several moldings.
And how did you attach the woodwork on the face to the stone? I'm leaning towards Tapcon screws or expansion anchors into the mortar joints, as I don't want to put any holes or construction adhesive onto her brand new brickwork.
I have some detailed pics I can share with you. The top is made up of a 1x10 ripped to width with a PVC edge molding and PVC crown molding below that. The pillars and other moldings are wood. I used Tapcons in the top only which keep the whole assembly tight against the wall. The face and side pillars are not attached to the stone. They are held in place only by the hearth and baseboard molding. I built the whole mantel in a way that it could be removed easily. This made painting it a breeze. I also wanted to make it removable because I have lots of A/V cables routed behind it. If I ever need to change or add a cable, I can remove the mantel. Send me a PM and I'll elaborate on the details. The project wasn't too bad, but I spend LOTS of time upfront working out every detail so I don't paint myself into a corner.
