    Labor Day 2015--What's on the menu?

    When we bought our house--about a month before Labor Day--9 years ago, the previous owners said in parting, "Get ready for the parade." We found out what that meant pretty quickly with our first Labor Day combined with a housewarming party. The City hosts a fairly large parade that winds through downtown and then past our house. If it's an election year, we are sure to see all the candidates all the way up to past/future Governor. Since then we have always hosted a nice get together.

    I started with the boiled St. Louis ribs in a soy sauce base. After the ribs are cooked, I skim off all the fat, then reduce it down with some additions. That will be used for basting when I put them on the grill tomorrow.

    I've currently got another slab of ribs on my BGE smoking in the traditional manner. Tomorrow morning I'll sauce them with some Bull's Eye BBQ sauce.

    Hot dogs for the kiddos and less adventurous.

    Tomorrow morning I'm going to season some chicken thighs with season salt then grill them on the gasser. Some will get sauced with a mustard base Carolina style BBQ sauce and the rest will be left as-is and served with Nando's Peri-Peri sauce.

    I wanted to do a brisket but it would have been too much since we didn't want to be too busy getting stuff ready. We already spent the weekend doing a whole bunch of yard cleanup and landscaping--as have my neighbor's.

    It was also my younger daughter's birthday last week so we'll also have cake.

    We're leaving the sides to guests.

    So what's on the menu for tomorrow?

    I fired up the BGE this morning and put on a big cast iron Dutch oven with a large pot roast with potatoes/carrots added later. When that comes off Ill chunk on a butt, hook up the didg-I-q controller, set it for 190 and turn it loose to cook for probably 24 hours! My fathers assisted living hosts a lunch on holidays and my pulled pork is always a hit. It's hard to find a better grill than a Big Green Egg.
