    DIY Pizza Oven

    As some of you already know, cooking is also my hobby.

    The L.A. newspaper had an article about cooking homemade pizza. The suggested, partitioning off part of a standard oven, with firebrick.

    Here are my $14.00's worth of firebrick. I already had a pizza stone. It was $19.99 at the local Bed, Bath and Beyond.



    The pizza stone is well stained, not dirty. They advise living with the stains, as any cleaning products will be absorbed by the ceramic stone.

    Here is my pizza oven.



    I turned the oven up to 500 F. I let it warm up for an hour.

    My first pizza wasn't pretty, but it tasted great. Just a simple tomato sauce and mozzarella/parmesan pie. Let me know if you want the recipe.

          More even heat distribution...

          I use firebrick inside my smoker for much the same purpose.

              I Need to check with my SIL who just got back from a refractory short course, but I think at only 500deg you could use normal brick for the side & top. If you were going to build a fire in there it would be a different story. The brick adds thermal mass. It keeps the oven hotter when you open the door to put the pizza in or take it out.

              Still you a regulation pizza stone for the bottom though, some brick or ceramics can have strange heavy metals that you don't want on your pizza.

              It looks like that bottom shelf could use a little help though

                The Blodgett, gas fired ovens I have dealt with (also another brand I can't remember), have open burners, under a Rokite rock. (three pieces 100+ lbs on the larger ones) The top and sides are stainless, with an airgap that is part of the ventilation. I helped rebuild one a few years back and got stuck in the oven, when cleaning out the tracks the rock fits in.

                I was told about some at our local Habitat Restore a few years back and went to look at some for a friends restaurant (backup ovens). They were too small and were missing the brick (the most expensive part). Another friend went down and bought them, and installed them in his basement, by the bar. Two 48" ovens, that he has his large family over for pizza.
                She couldn't tell the difference between the escape pod, and the bathroom. We had to go back for her.........................Twice.

                      In the time it takes to heat up the oven, I could have ordered a pizza, had it delivered and eaten it.
