        I'm way better at cracking them with one hand. If I use two I get shell in whatever I'm trying not to get it into. When I use one hand, after I crack the shell, I have my thumb resting horizontally on the front half of egg and my index finger resing on the other half on the opposit side. I push my thumb forward and curl my index finger down (thus pushing the two ends of egg away from one another. This leaves the shell in two equal parts and the rest is easy.

          Practice makes perfect!

          When I want scrambled or over-easy eggs, 2 at a time, I crack one in the left hand, one in the right, at the same time. Always perfect yolks!

          But, my mother taught me.
