Yeah, the inventor of that recipe is one of the BBQ Brethren... I've seen that a long time ago... Makes my chest hurt thinking about it...

            Jeff,

            That's obscene.

I have been a little bacon obsessed lately.

I am on my second Berkshire Pig [Kurobuta] pork belly. I braised some of it, but the rest of it went to fresh bacon. I dry cure it with salt, brown sugar and maple syrup. About a week in the fridge--then heaven.

I have not tried smoking yet. I really like the taste of the fresh bacon.

              I wouldn't smoke it, I'd eat it...(rimshot)

Also, with a name like yours, wouldn't that be some kind of cannibalism??

This recipe was (in truth) developed by my cardiologist.

Since the group/team is local for me, and so are several of their competitors, I passed this along to several of them today.

Now for samples, and a bypass.

That looks good! Gotta try it.

And I can't wait to get back to the States (and Texas) to try some battered deep fried bacon that I have been reading about!
