FWIW I have an 04 Sienna and it does everything pretty well. I average 21-23 in town, 26-28 on the highway. Fold down rear seats, removable middle seats. I will say that removing the center seats increases the mileage, I wish the rear ones came out. Loring has a good point about storage but the things are heavy and the more mass....
V6, 4 speed automatic, I pull a tall cargo trailer occasionally to move a piano and it does better than the GMC Sonoma it replaced. I'd suggest counting on replacing the rear shocks with heavier ones if you plan to haul 7 people all the time.
