    Corn beef and cabbage

    Tomorrow's the one day out of the year LOML makes it. She doesn't like it, so I eat hers too. Anyone else gonna indulge?

    Don't have any corned beef and don't care for cabbage. So guess I'll just have to be content with a pint o' Guinness.

            I do mine in a pressure cooker, and usually about once a week... Like it so much that I don't wait for a holiday to indulge.

              Went the Rueben route today. Ended up sampling about 1 pound while the corned beef was cooking, you know "making sure it was getting done, but not over cooked".

                I cooked two briskets last night so they will be ready to go this evening. Two is a little much but they seem to shrink up more then they used to.

                  I'm far from Irish but I, too, indulge in corned beef, cabbage, and potatoes this
                  time of year. I set it up in the crock pot in the morning and had it for dinner. I
                  had it last night while watching the "The Quiet Man".

                    Put it in the crock pot about an hour ago.

                    I love corned beef but am not a big cabbage fan unless it is sauerkraut. But, since I am doing the Atkins thing to drop about 20 winter lbs, it is awfully nice when a holiday specialty happens to fall in line with your diet!

                    Growing up, corned beef came out of a funny shaped can. A few years ago, I started wondering what the definition of corned beef really was. I asked all my friends how exactly you "corn" beef and besides a few highly disturbing suggestions, nobody knew. I finally found it on the internet. Just 20 years ago, I would have probably had to remain ignorant my whole life...

                        I see your friends act their I.Q., not their age, too

                        I won't be getting any tonight. We have our bowling league and that leaves approximately 5 seconds to grab dinner between my wife getting home and us heading out to bowling. Maybe I can convince her to make some for Tues or Wed.

                          Yep, Already did...last Thrursday and still have some left for sammiches.

                          Cooked two in crock pots and steamed some cabbage and made some corn bread...yum!

                          One of my favorite meals.
