Well a 12" wide panel made from solid maple can move about 1/8" between seasons. So even with the panel pinned, you might still see 1/16" at the edges.

One solution: Prefinish your panel (before assembly).

Almost as good: Finish your doors during your dryest time of the year.

For plywood/MDF cores, it probably doesn't matter.

Do you guys do multiple coats of primer and sand (220/320) between coats and then three coats of finish?

I use one coat of stain, then sanding sealer and finish with at least two coats. Sometimes I polish out with paste wax. Depends on what it is and the type of wood and finish I'm using.
For painting, one coat of primer. Assess coverage and sealing. Either apply another primer coat or go to finish depending on the result of the first coat. I rarely put more than 3 to 4 coats if painting.

I only hand sand finish coats with 220 on a block. Just looking to knock down and specs or bubbles.
