What is the best way to install a back on a simple bookcase that will have no trim or moldings? I would rather not just tack a back on the rear of the bookcase.

Usual way is to rabbet the top, bottom, and both sides of the bookcase and inset the back by roughly its own thickness, or maybe a little more ... i.e., for a 1/4" back, I cut a 3/8" deep rabbet. The obvious advantage is that the rabbet hides the edges of the back panel. However, the shelf depth must be reduced by an amount that corresponds to the rabbet depth.
Same advice from here. You may want to look at staples depending upon the material. Advantage of this is if you can guarantee your back is square, it should help square up the case.
