Butcher block counter with a sink

A recent thread about tung oil prompted me to ask a question.
I am thinking of installing butcher block countertop in a kitchen. It includes a drop-in kitchen sink. What is a good finish for such countertop?
I saw statements that butcher block countertop can even be used with undermount sink but I am not adventerous enough for undermount sink with wooden countertop.
I see some statements that even a simple butcher block oil used regularly is sufficient but others are saying that this is too high maintenance and recommend "Waterlox". From what I could figure out - waterlox is tung oil based finish. Anybody tried butcher block counters around a sink?

I've installed several sinks on BB countertops including my own.

Oiling is very important. Once a day for a week, then once a week for a month and then every month.

I have used mineral oil (from the drugstore) exclusively. It's inexpensive and safe (can be taken internally, don't know why you'd want to. ).
