Finish for refinishing inside window frames

I need to refinish the insides of our window frames. They are natural wood, and whatever finish is on them currently does not seem to build much of a film and leaves the wood fairly natural, which matches the wall paneling.

I need to refinish them. Wife and I like to have the humidity up in the winter to combat dry skin, and that tends to lead to condensation on the windows. So the finish should seal the would well.

What finish would be best suited? At first I though water-based PU (to keep the smell down), but that usually builds a film that would make the windows stick out from the surrounding wood. OTOH that would help protect the wood better against the condensation.

    Which finish would you suggest?

    Thanks

I would probably use a water based polyurethane, maybe in a satin finish. Oil base varnishes and polyurethanes can add an amber tone (WB won't) to the finish which may change how the woodwork looks. Another plus is that it won't stink up the house.
