    I would think you could. You could either make it side by side, or on top of each other. The trick is having the center of gravity of the weight(s) (mostly the bottles in this case, wood weight would be minor) within the base (the part that touches the table/counter/etc).

    With a multi-bottle one, one on top of the other, your raising the center of gravity higher, so more chance to be top heavy, also having only 1 bottle in it probably would not work well, since the center of gravity would be outside the base, it needs the other bottle as a counterweight.

    One side by side I would think you could make it as long as your heart desires, or counter top which ever comes first. Adding more bottles along the length would actually make it more stable. Now taking an extreme case if you make one able to hold 10 bottles, and only one bottle is in it. The weight of the wood vs the weight of the bottles would shift the center of gravity to outside the base.

    Just thinking out loud.

          I have seen and made versions of this, but never one that had a wedge shaped profile. I like it.
