Although they're not "woodworking" books, per se, I heartily nominate these three titles to the list:
The Workbench Book, by Scott Landis
The Workshop Book, by Scott Landis
The Toolbox Book, by Jim Tolpin
Available individually, or as part of a slipcased set. Each covers the history and development of its subject matter, providing lots of entertaining reading as well as good ideas for one's own "next" workbench, workshop, or toolbox.LarryComment

I would say that almost anything by Taunton is great to have.
I have the new "Joinery" by them and it covers everything you would want to know about every type of joint and how to costruct in multiple ways. I would love to own the whole set but I think thats nearly 8 volumes and at ~$30-40 a shot thats quite a lot.
