    Meat Glue

I never have heard of this stuff before. I came across this video on Kim Komando.

I guess it's like a hot dog. It tastes pretty good as long as you don't think about what's in it.

I didn't know what the glue substance was, but I have known for several years that something was used. Growing up on a farm where "real" meat was seen, cut and eaten - pork, beef, chicken and turkey, it became evident some years ago that these "packages" were not the real "solid" meats. The subtle flavor differences when cooked gives it away - a little like noting the differences between Coke and Pepsi. And the look, such as what kind of animal produced that shape of cut?

There is something about large area of meat being joined together that gives it away in its flavor. Why does a steak taste like steak, but when it is ground up at home, without any additives, taste different simply because of being ground up? In this same manner, when several large chunks of meat are bound together as one unit, it changes the flavor and texture also. To the untrained eye, it may look like a single piece of meat.
