    Top o the day lads and lasses

    The brisket is simmering, cabbage and veggies are ready to be added to the stock. The stout is chillin in the fridge and the sun is smillin here in the far south of MN. LOML and I are waiting for our daughter and grand-baby and son and grand-puppy to arrive for a visit. Don't have any green to wear but red/black plaid and blue denim is more my style.

    Happy St Patty's day and may the leprechauns be special good ta ya all.

    Ditto for me... (although, I must confess that I like corned beef so much that I've been cooking and eating it for the past week... )

      I am allowed to have corned beef and cabbage twice a year -- St Paddy's day and my birthday anniversary in September. However I had it also last week at the men's luncheon put on by the ladies garden club. I told my wife that that doesn't count.
      I love the stuff.
      Several years ago we toured Ireland and couldn't find it anywhere. I did find a lot of Guinness though.

        Ah yes, and a top o' the day to you too.

        It's corned beef for dinner tonight but the cabbage now takes too great a toll on me, so it's carrots in the pot and soda bread on the side.

        This time of year the corned beef is on sale and keeps in the fridge for months and the freezer for darned near forever. I'll buy several and enjoy it at least once a month until a bout mid summer.

        So, what's the proper dessert to go with the corned beef and cabbage?
