    Tabasco Sauce

    I don't take any myself, but I thought this was interesting reading on the company. I always thought Heinz or somebody big made it.

      My dad had (and still has, AFAIK) a serious Tabasco addiction ... one of my memories from my youth is him putting it on EVERYthing. I like it well enough myself, although I lean toward Texas Pete as my go-to hot sauce.

      I have been to the Tabasco factory at Avery Island, LA) and taken the tour, so I knew they were a relatively small, family-owned business. It was interesting to learn, while watching the audio/visual presentation, how they grow their peppers in many different areas, so that a failed crop won't leave the world Tabasco-less in any given year. (Unfortunately the "factory tour" portion of the visit was pretty lame ... we just stood at a big glass window and looked out into the room where the finished bottles were being put into cardboard boxes for shipment. But this was perhaps 20 years ago; by now it may changed.)

        It's an interesting story, but we don't eat that stuff. It does work good on woodwork that you don't want dogs to chew on.

          I love it... Pure and simple. The original kind, that is... No need for all the new varieties. Those Tabasco peppers and Avery Island salt have a taste all their own, and I will use the stuff until the day I die (or the day they remove my stomach ).

            Avery Island is a salt dome formation, although it is no longer an island. I've been in the salt mine that supplies the salt for Tabasco sauce. It is one of the oldest salt mines in America, with mine head timber work and galleries from the mid 1800's.

                Had some of them for breakfast Saturday. I still miss Bloody Bulls though.
                Tobasco is needed for Hot Shots as well, Cinnamon Schnapps & a drop or two.

                    Tabasco Factory Tour

                    We went through the factory tour approximately 1994. The tour guide pointed out the sorting tables. All produce brought into the plant pass over the sorting tables. There they use handicapped and/or challenged adults to sort the chilies. the guide said they will follow instructions exactly and don't rationalize about marginal chilies. While walking past the bottling machine the automatic quality control machine found a cracked bottle. they stopped the whole line and destroyed everything then washed and inspected the whole line.

                      Just like duct tape... when I get down to 2 bottles or rolls left... I re-order a case. Did the tour years ago as I've been a addict for longer than I care to remember.

                          I lived in the area for 5 years and was totally surprised upon arriving in Japan and seeing how popular Tabasco is here. Readily available and in many restaurants too!

                            I remember quite a few years back, before Tabasco was widely exported to Japan, I knew of an old Japanese aikido instructor (long dead now) who would come to the States once a year to teach a seminar, and bring with him an empty suitcase specifically to carry a mess of Tabasco back to Japan. He and his cronies were all crazy about it in soups and on seafood, and his ability to get it in sufficient quantities made him a BMOC.
