    Ate Garbage Today

    This time of the year LOML makes holiday candy. She made chocolate covered cherries. The milk chocolate she used was a different brand than she usually uses, and it remained sticky. So, she was going to throw them away and I said...WAIT, I'll take care of them.

    They were a bit gooey, but I forced myself.

              I don't think it was necessarily the fault of the chocolate. Chocolate needs to properly tempered or it will stay sticky. It has to be heated to a specific narrow temperature range, then allowed to slowly cool to about 92deg, and held there for it to form the right type of crystals. If done right, the chocolate will harden and have a nice glossy surface, if not, it may never harden & the surface will have a dull flat surface. Google Chocolate tempering for details ..

                Thanks for the suggestion. She has been making candy for about 15 years, and is aware of the schedules with chocolate. I don't complain when something goes wrong and she wants to 86 the batch. But, I'll pass on the info anyway.
