Squeezing all of the glue out is assuming you have a perfectly joined edge to edge contact with no gaps. This is next to impossible for two reasons:
1) pores
2) getting it that perfect requires a ton of luck. When engines are built the valves are designed so that they wear into fitting perfectly with the head.
Glue isn't a gap filler. You can see this for yourself by letting a blob of glue dry. Its pretty flexible. So You want as small of a gap as possible.
I personally clamp nice and tight, making sure I'm shy of damaging the wood the face of the clamp is on.
