    Cooking Easter Dinner

    Mum came over tonight for Easter dinner. After years of her cooking for the family, even as it grew with spouses and children, it's time to give back. LOML had to work so I was elected to prepare dinner. Actually, LOML alway said that the kids wouldn't starve if she wasn't around.

    Around 10 am this morning I put the ham in the oven for a few hours and let it cook while I cleaned the house. I put my daughter to work sweeping and vacuuming. I also cooked scalloped potato's and green beans.

    The best part about dinner was someone else did the washing up

    It sounds like a great meal! Fortunately for us we'll be going over to some friends house so we didn't have to make the whole meal, just dessert. Have a Happy Easter!

      Yesterday, I made a huge pot of fresh collards, cooked with smoked ham hocks for 6 hours. It was so good that I have a real dilemma figuring out how to top it with today's dinner... Still thinking...

          LOML is being a stern nurse and won't let me help cook, but she also headed me off at the pass. She went to the Honey Baked ham store and bought the whole dinner prepared and we will be having that in a few hours.

            Take care of Mum. LOML always had the chore of hosting the get togethers too. The last couple of years, the kids have been taking the responsibility. But she still takes a couple of dishes she prepares at home. I'm sure Mum will appreciate your helping her out.

              My youngest daughter (13) and I are the only ones in the family that like lamb. So we're making lamb chops and I honestly have no idea what the rest of the family is having.

              But for lunch... Egg salad sandwiches. Oh yeah.

                I'm 100% grade "A" cracker, and not the slightest bit ashamed of it... No chittlins around here, though, as I prefer my chow a little less "intestinal". But I can eat my weight in cracklins (pork rinds).

                  IMHO, Leg of lamb is right up there with prime rib. Lamb chops are a very close second to L of L. Enjoy.

                    My LOML being a Brit expat and me having lived there for several years, this Easter we had a roast leg of lamb! UM-UM-UM!! However most of our neighbors just go "Yuk" when we tell them what we are having. Also roast potatoes and brussell sprouts. Double "YUM"! Sweet was apple tart with Birds Custard. Can't get better than that!

                      When we were in San Diego this time a couple of years ago, we were on one of those levels of the hotel where they had hors d'oeuvres at night. One night they have two HUGE trays of lamb chops. When my youngest and I walked into the lounge room 1/2 hour after the lamb was put out, not a single chop had been touched (and the floor was full).

                      My daughter and I got right on that.

                      The attendant said people just don't like lamb.

                        Our DIL lives in a part of Oregon that raises lots of sheep. The farmers grow mostly grass for seed and put the sheep (and lambs) out to feed on the grass between harvests. Hundreds and hundreds of sheep - - so much so that eagles are learning where to find a tasty meal. (There is some controversy as to whether or not the eagles kill the lambs or just feast on ones that die from other causes.)

                        Anyway, in spite of its abundance, lamb is not a very popular meat down there. Could never figure out why.

                        By the way, we had leg of lamb for Easter dinner.
