From dealing with pc's and users, what they are doing is:
Leaving their machines set to auto fill. So if you visit a site they have visited, you might have access to their email, passwords, paypal info, banking, financial, etc.
I am not a lawyer, but there was a case locally, where an attorney's office was broken into, and his pc's were stolen. I don't know how much the police recovered, but it left me with questions like: Can anything on those be used as evidence, in other cases, since the pc's are in evidence?
What kind of liability does the lawyer have?
I have been asked to dispose of drives by lawyers and accountants I know, and I take it very serious. When everything is said and done, I have added the magnets to my collection, and the parts are disposed of in various ways.
